Calzones!
Calzones
Calzones are essentially pizzas that are folded in half, the dough edge pressed closed and the sauce served warm on the side (not inside).
What you’ll need:
Bravadough
Bench flour
Parchment paper or Bravapaper

1. Preheat oven to 400F (including stone if using)
2. Remove ½ of your prepared dough (about 10oz) from refrigerator following process for Traditional Pizza
3. On one half of dough, layer cheese, meats, vegies and top with thin layer of cheese (thin cheese slices or fine shred work well) – make sure to leave the outer 1” without fillings so dough can be pressed together to seal
4. Gently lift paper or baking sheet beneath dough that doesn’t have fillings, and fold it over to cover the side that with fillings. DO NOT PULL BACK PAPER YET.
5. Gently press seams of calzone together before removing paper
6. Peel back paper, sprinkle seam/curved edge with a bit of DUSTING FLOUR and gently pinch and press edges to seal (image)
7. Transfer calzone on paper to baking sheet and trim paper to fit pan.
8. Bake at 400F until deep brown and crisp crust formed
9. Remove from oven and let cool 3-4 minutes before cutting in half
10. Serve with dish of warmed marinara on side
