WORKING THE DOUGH INTO PIZZA
It starts here – Making Your Dough!
Dough may be made 1 hour or several days in advance.
What you’ll need:
Butter 3 tablespoons (SOFTENED)
Warm water 1/3 cup
Sugar 2 teaspoons
Cold Water 1-1/4 Cups
Large Bowl
Parchment paper or Bravapaper
Stand or Electric mixer

1. Bring butter to room temperature – you can microwave to soften, even melted, but butter should NOT be hot.
2. Coat a 4qt glass bowl with olive oil or butter (or, coat inside of resealable 1 gallon bag with oil)
3. To glass measuring cup or bowl, add 1/3 cup warm water (98-100F), 2-1/2 tsp sugar and yeast packet. Stir well to dissolve and set aside.
4. To stand mixer bowl, add 1-1/4cup cold water and contents of Pizza Dough Dry Mix
5. Add softened butter and yeast+sugar mixture to mixing bowl.
6. On low speed, combine ingredients until well incorporated. Increase speed to medium and mix for an additional 1 minute.
7. Transfer dough to prepared 4qt glass bowl. Cover dough with plastic wrap and refrigerate for 1 hour. While dough is chilling (this is a cold rise period), preheat oven for baking your pizza.
Note: dough may be stored for later use easily by storing it in a 1-gal resealable bag (coated with oil or butter). As dough rises in bag, release excess gas produced by yeast periodically and degas dough by dropping on the counter a couple of times to release accumulated gas bubbles.
